Butchery Demonstration by Erik Sather owner of Lowery Hill Meats in Minneapolis followed by a Farm Tour
Butchery Demonstration: 12:30-3:30 and Tour of the farm: 4:00
Experience the unique opportunity to observe Butcher Erik Sather demonstrate how to butcher a half hog into primal and sub-primal cuts. In class you will learn the basics of hog butchery, primal vs. sub-primal cuts, preparing different cuts, and discuss the processes of fresh sausage, smoking and dry-curing.
A 45-minute walk through the farm will follow the demonstration. You will experience a real working biodiverse pasture-based pig farm in action. On your walk, you will see how our pigs are raised as chickens, ducks, and guinea fowl free range around you. We also keep a small herd of dairy goats, alpaca for fiber and horses.
Farm Tour followed by Dinner on the Porch featuring our Mangalitsa Pork prepared by Chef Christopher Ray
Tour of the farm: 4:00 and Dinner on the Porch: 5:00-8:00
A true farm-to-table experience!
Please join us for a farm tour followed by dinner on the porch. Five courses directly from our farm featuring Mangalitsa pork. On your walk you will see how our pigs are raised as chickens, ducks and guinea fowl free range around you. We also keep a small herd of dairy goats, alpaca for fiber and horses. As we tour Chef Chris Ray will be creating dinner. Favorites may include Pork Belly with carrot ginger slaw or duck egg Creme Brulee with juneberries. Group farm table seating on the porch with a lovely view of the farm.
